Monday Night Dinner...Taco Monday...

I had some frozen country style pork ribs...usually best for braising over long period of time.

I didn't have time to braise so I butchered them off the bone and cut into 1/4 inch strips...

2 lb sliced pork country ribs off bone
1 lime
Cumin, Cilantro, Salt, Pepper
Olive Oil
Fresh corn tortillas
Cilantro and White Onion garnish

Marinate the slices at least for an hour, combine all ingredients. I lit a very hot charcoal grill and flash grilled them in 7 minutes or so. Served with fresh cilantro and onion...hot sauce and some sour cream.

Good stuff...lesson is that tough meat when sliced thin and quickly grilled is tender.

Today's Dinner 3-11-2010

Ate a huge blue cheese burger last night so I decided to make something healthy.

After glancing through Daiquiri Dick's (one of my favorite spots in Puerto Vallarta) cookbook, I settled on black bean soup with a salad of beets and mustard greens.

Here are the ingredients I am using for the soup:

  • 2c Black Beans + 1 box of low sodium stock
  • Carrot, Celery, Yellow Onion, Garlic sauteed in olive oilg
  • Salt, Cumin, Clove, Basil, Oregano, 1 Ancho and 1 Guajillo chile (dried), finish with honey
I will puree the soup after 3 to 4 hours of simmering with an immersion blender.
